It was delicious!
There are, in fact, alcohol-soluble flavors in tomatoes, which is why some people add a bit of red wine to tomato-based sauces. I don't particularly like the way that tastes, though, so I don't do it.
Of course, there's also the classic vodka sauce, but you cook the alcohol out of that; it's not a flambe...
Perhaps with some interesting modifications...
