I don't know what your level of skill is, but I would recommend Paula Dean's goey cake recipe (go to foodtv.com and search for goey cake)
Other than that, you could try a chocolate volcano cake.
truffle- do what IG said with the bread crumbs. Soak them in milk for a minute then squeeze the excess out. (use croutons or stale bread) Also, mix your meats. Use 1/2 & 1/2 beef and turkey. (you're Jewish, right?) The beef is too heavy by itself.
As for bland, just add more flavor. Make sure you sweat your veggies really well before mixing them in. (Dr Dan is roasting them first now because it's healthier) More worchestestesteshire and even something non tomatoe based like maybe Frank's Red Hot.
Hmm... things with flavor aside from tomatoes...
Garlic, celery, herbs, horseradish, almonds, sour milk (which, by extreme extension, could indicate cheeses, too), ginger, corn, onion, mushrooms, capers, fish, olives (green particularly), pimento, cyanide, anti-freeze, rust, anchovies...
The possibilities are endless.
Red peppers are a kind of nightshade.
for meat. Instead, take a nice sized potato, skin it, and then puree it,
or use a fine mesh/grater to grate it into paste, and add that instead.
It basically dissolves, but the starch will bind the meat together.

I had never heard of nightshade vegetables before this discussion! It looks like hot peppers, potatoes and eggplant are out as well.
I had a roommate who couldn't eat nightshades. You'd be surprised how limiting your choices become.
Not that you should ever eat a green tater to begin with, but not being
able to eat potatoes. That's just...wrong.
We actually don't use bread crumbs or cretins.
We use oatmeal... nice and FIBERY!
